It's a winter staple in our house, but is always a big hit, and very easy to make. I really only lightly fry off any vegies I have with some onion and olive oil, add crushed tomatoes, vegetable stock, and some lentils, and let it simmer away for a while. We love it on a bed of brown rice and with a generous handful of fresh parmesan cheese, but you could always omit those - it's lovely on it's own, too.
